The Working Momma Diaries: Cookies - Simple Toddler Teacher Gifts


Due to popular demand I'm continuing this series - the Working Momma Diaries - to share some of the things I've learned while balancing work and being a momma.

For those that don't know me well, I travel for work and work long hours in a face-paced career. I used to travel every week and took a role for the current year where I travel about 1-2 times a month instead. My husband also travels for work 100% of the week. Needless to say, we have spent the past year figuring out a new routine and balancing crazy travel, airplanes, nap times, family time, bedtime, and trying to find time for friends and romance. I looked around and realized a lot of my momma friends work and figured I'd share some of the best tips I've learned from them and my time so far.

Today I'm sharing my go-to teacher "DIY" Christmas gift for all the mommas out there who want to be Martha Stewart but instead use the coveted later evening hours after waking up to make breakfast or lunches, fighting traffic and day-care pickup lines, juggling busy work calls and washing the drool off of your blazer from this AM, babies are finally fed and in bed, and you've poured yourself a well-deserved glass of red wine to create something special to say "thank you" to those who care for your kiddos during the day. I have your answer, ladies: pizzelle cookies!

My family is Italian and these waffle-like thin, crispy cookies have always been a holiday tradition in our house. Think of these as a mix between a cookie, a crepe and a waffle. My mom used to always make our teachers these cookies as I was growing up. I remember her spending hours in the kitchen with us kids, laughing and adding the perfect amount of Anise or Almond extract to the cookies. To be fair, my mom STILL makes these cookies for us each Christmas and now that I'm a momma, I wanted to continue the tradition. They are special, they are delicious, they are fast and they are affordable - the perfect gift for little one's teachers! So I'm sharing the recipe on the blog today and some of the things I do to balance making these during the work week.

After the cookies are made, I either rolled them into cannoli shapes and freeze for later (and de-frost and add whipped cream - NOMNOM), or stack them in piles of 6-12 and wrap them with festive saran wrap and ribbon with a cute card with the history and recipe of the Italian Pizzelle.
